1 dozen eggs
1 dozen large flour tortillas
1 lb. cherezo or hot spiced sausage
1 lg onion chopped
shredded cheddar cheese
Fry the cherezo or sausage and chopped onion in the
bottom of the dutch oven, stirring the crumbled cherezo
or sausage with a wooden spoon until done. Beat the
eggs with salt and some milk until the eggs are smooth.
Add the eggs to the meat and scramble until soft-done.
Spoon into a warm tortilla add cheese and roll with one
end folded to make a pocket. A good picante sauce
goes well with this dish.
