Mexican Rice

2 lbs ground beef
3 sweet peppers
1 large onion, chopped
4 garlic cloves, chopped
1 lb brown rice
1 jalapeno pepper
3 oz chili powder

Brown the crumbled beef in the oven add salt to
taste. Add to the oven, chopped garlic, pepper, and
onion. Cook about five minutes or until the onions are
transparent, stirring with a wooden spoon. Remove the
oven from the coals and add the chili powder and rice,
stirring thoroughly to coat all rice grains with this
mixture. Slowly add water to cover the mixture 1/2 inch.
Cover and cook at a slow simmer until the rice is done,
about 35 to 40 minutes. Check on cooking progress
often, adding water or leaving the lid cracked to assure
that the rice is done, with little or no moisture left in the
oven. Do not over cook the rice. Each grain should
stand separate when done.
