Dirty Rice

1 frying chicken, disjointed
1 lb pork sausage (spice to taste)
2 medium onions, chopped
3 sweet green peppers, sliced
2 stalks celery, sliced
1/2 lb fresh mushrooms, sliced
1 lb brown rice
salt and pepper to taste

Crumble, then fry sausage in dutch oven. Next, pour
in brown rice and stir well coating each grain with juice
from sausage. Add chopped onions, sliced peppers and
celery. Stir again; top with chicken pieces and
mushrooms. Remove oven from coals and add water
very, very slowly at first to prevent cracking the dutch
oven. Add enough water to cover the rice and
vegetables. Notice this does not fill the oven nor cover
the chicken. Cover and cook at a simmer about one
hour on slow coals. The last 20 minutes of the cooking
time, add hot coals to the lid to brown chicken. Watch
moisture level and crack lid or add water as required to
complete cooking the rice so that each grain stands
separate when done. Bon appetite!!
